If you're looking for a healthy, sweet, and savory meal, look no further. Lubya bi lahme, Arabic for "green beans and meat", packs a tasty and hearty punch and can be made with just a few ingredients. Although the recipe calls for almost two hours to fully cook, most of that is simmer time.
Ingredients
2 pkg or 1 large bag frozen or fresh green beans
1/3 lb meat, cubed (e.g. top sirloin, stew meat)
1/2 small onion, chopped
1 ripe tomato, finely chopped
1 8-oz can tomato sauce
3 tbsp shortening
3-3 1/2 Cups water
1/2 tsp salt
Steps
Wash and clean the fresh green beans and cut into halves, or you can use frozen green beans as they are
Finely chop the onion
Cube the meat into desired size
In a preheated pan, melt shortening and sauté onion and meat until onions are light yellow
Add fresh tomato and beans and stir
Cook the dish covered for 10-15 minutes
Add tomato sauce, water and salt and cook for 1 1/2 hours until sauce is cooked down
Serve with plain rice
