It's the type of salad that you make where you're in a rush, and prepping a a meal last minute. The catch is that it's quick, easy to make and super nutritious.

Ingredients
1/2 Head romaine lettuce
1/2 Head iceberg lettuce
1 Medium cucumber
1 Small green pepper
3-4 Green onions
1 Tomato
1/3 Cup garbanzo beans
1/3 Cup mixed parmesan and mozzarella
Chopped turkey or salami (optional)
3-4 Tbsp red wine vinegar
1 Clove garlic
2 Tbsp lemon juice
5 Tbsp olive oil
3 Tbsp balsamic vinegar
2 Tbsp mayonnaise
1/2 Tsp salt; black pepper to taste
Vinaigrette
Steps
Clean and chop all the vegetables finely.
Crush garlic with salt, mix with mayonnaise, and gradually mix in vinegars and lemon juice (dressing should be fairly thick).
Add olive oil and mix once again.
Combine all vegetables, including garbanzo beans, pour dressing over all, sprinkle with black pepper and toss thoroughly.
Recipe Note
You may garnish salad with a small portion of the chopped tomatoes, and turkey or salami, if you wish.
