This hearty tomato and meat dish might bring back some memories of when your grandma made it for you when you were a kid. It is super juicy and nutritious and packed with flavors. The best part is that you can make it in less than an hour.
Ingredients
3 lbs fresh tomatoes
1 small onion, finely chopped
4 tbsp shortening
1 tbsp parsley, chopped fine
1/2 lb meat, cubed
1/3 can garbanzo beans
1/2 tsp salt
Steps
Wash tomatoes and cut them into small pieces
Chop onion and cube meat (stew meat or sirloin steak)
In a heated pan, add shortening, onion and meat, cook them over medium heat until onion becomes light yellow
Add garbanzo beans, tomatoes and salt
Cover and cook for 30 to 60 minutes
Remove from heat and place mixture in a round or oblong baking dish
Bake at 350 to 400 degrees until all the liquid is absorbed
Sprinkle with parsley
Recipe Note
We suggest that you prepare this dish ahead of time. Cook for one half the time and finish baking the day you want to serve it. Keeps well in the freezer.
