It's tender, flavorful, juicy and just what you need to cook for that special someone or even yourself if you feel like it. Super easy to do, and the results are astronomical. Here's how to make it.

Ingredients
1 Small leg of lamb
1 and 1/2 Tbsp allspice
1/3 Cup lemon juice
1/2 Tsp salt
1 Small head garlic, peeled
1/3 Tsp black pepper
1 Bag baby carrots (optional)
1 Large oven cooking bag
15 Small red potatoes (optional)
4-5 Small onions peeled (optional)
Steps
Clean the leg of the lamb.
Mix lemon juice with allspice, salt and pepper and marinate lamb in it overnight.
Before roasting, make small slits in lamb and place cloves of garlic inside slits, using the full head of garlic throughout the leg of lamb.
Place the leg of lamb in oven bag; seal the bag.
Wrap the bag in aluminum foil and place in roasting pan.
Add 2 cups of water to pan and place in oven at 4000 for 1 1/2 to 2 hours.
Open aluminum foil for the last hour to finish roasting the lamb.
If using vegetables, poke hole in bag so juices are in aluminum foil.
Cover chosen vegetables inside foil and cook for 1 hour until the vegetables are done.
Open the foil, let the lamb and vegetables sit for an additional 20 minutes to finish roasting.
