Japanese Eggplant With Ground Beef and Pine Nuts
Eggplants are extremely versatile, very affordable and highly nutritious. Imagine when combined with ground meat and nuts. Well the results are heavenly. Check out this Japanese Eggplant With Ground Beef and Pine Nuts.
1 Lb ground beef
2 Lbs eggplant (small type)
2 Tbsp pine nuts
1/2 Small onion, chopped
1/2 Tsp salt
1 Tsp allspice
1/3 Tsp black pepper
1 Cup Mazola oil
1 Tbsp shortening
18-Oz can tomato sauce
1 and a 1/2 Cups water
Peel eggplant, wash and make small slit in middle of each eggplant.
Pour oil in frying pan and fry eggplant on medium high heat until lightly browned.
Remove from pan and dry on paper towels.
Fry ground beef and chopped onion in pan on medium heat until onions are light yellow and meat is browned, stirring often with fork.
Add pine nuts and shortening, stirring frequently for 10 minutes.
Add allspice, salt and black pepper. Remove from heat and allow to cool.
Stuff eggplant with meat mixture and arrange in a baking dish.
Prepare sauce of tomato sauce, water, and salt and pepper, to taste; pour over stuffed egg plant.
Place in oven at 350° - 400°, cooking until liquid is nearly absorbed.
Serve with plain rice.
Our suggestion : This may be prepared using zucchini also. May be made ahead of time and kept covered in refrigerator or freezer for later use. Bake at 350° - 400° on the day you wish to serve it.
