This traditional recipe is full of warm Mediterranean spices, sweet caramelized onions, and perfectly cooked fish pieces. It's a one-of-a-kind recipe made with widely accessible ingredients!

Ingredients
2-3 Lbs fish (cod, halibut, salmon, or similar type)
6-8 Onions, wedged
1 and 1/2 cups vegetable oil
1/3 Cup pine nuts
1/3 White pepper
1/3 Tsp salt
2 Cups rice
3 Cups water
4 Tbsp shortening
1/3 Cup flour
3 Tbsp salt
Rub
Steps
Wash the rice several times and set aside. Heat the vegetable oil in the frying pan; add onions and sauté on medium heat until they’re golden yellow.
Remove from frying pan and drain on a paper towel. Wash the fish with cold water.
Rub the fish pieces with rub preparation and let sit one hour. Fry fish with oil (or broil in oven).
Melt shortening in pan and fry 2 Tbsp cooked onion until dark brown.
Remove from stove and add water, salt and pepper. Bring to boil, add rice; place on medium low heat stirring after 15 minutes.
Cook another 15 minutes on low heat.
Cut fish into small pieces and mix with pine nuts. Place 1/2 rice mixture in the bottom of baking dish; add 1/2 fish pieces, onions and pine nuts, spreading over top of rice.
Add rest of rice evenly over top of mixture. Add rest of fish mixture evenly on top. Sprinkle with 1/3 cup warm water. Cover dish with aluminum foil and bake in oven for 1/2 hour at 300°.
Recipe Note
You can use tahini sauce with it too!
