Cooking this will make your kitchen smell like the Mediterranean. Filled with the aroma with a well seasoned fish and the grilled onions, this recipe is super easy and delightful to have when you have friends and family over.

Ingredients
2-3 Lb fish (halibut, cod, salmon, or your choice)
1 Cup vegetable oil
8 Onions, wedged
1/3 Cup pine nuts
1/2 Cup lemon juice
1/4 Tsp paprika
1/3 Tsp white pepper
1/3 Tsp salt
1/2 Cup water
1/3 Cup flour
3 Tbsp salt

Steps
Clean the fish; rub flour and salt mixture both inside and outside of the fish. Let it sit for up to two hours.
Fry the onion in oil until light golden in color. Remove it from pan and drain on paper towel.
Fry the fish with the leftover oil. Remove from the pan and drain on paper towel, then cut into small cubes.
Mix fish, onion and pine nuts in a baking dish. Mix lemon juice, water, paprika, pepper and salt. Pour over fish.
Cover with foil and bake in oven at 350° for 40 minutes or until most of sauce has evaporated.
