Egg Rolls with Meat
In the mood for some crispy egg rolls stuffed with the juiciest meat? Same. Here's a recipe for you.
1 Pkg egg roll wrappers
4 Tbsp shortening (or vegetable oil)
1 Lb around beef (or ground chicken)
1/2 Tsp allspice
1/3 Tsp salt
1/2 Green pepper, finely chopped
1 Small onion, finely chopped
1/3 Cup parsley finely chopped
1/2 Cup vegetable oil
1/3 Tsp black pepper
1/3 Cup grated carrot
Place the ground beef, onion and green pepper in frying pan and cook over medium heat, stirring a few times until the juices are evaporated.
Add the carrot and shortening. Cook 20 minutes.
Remove from the heat and add allspice, salt, pepper and parsley, stirring well. Set aside to cool.
Separate the egg roll wrappers. On each wrapper place 1 and 1/2 Tbsp of filling. Fold from each side to center, then wrap into finger shape.
Heat the oil in frying pan over medium high heat and cook egg rolls until they tur light golden brown.
Remove from the pan and drain on paper towels.
Serve as an appetizer or as a meal with a green salad.
Note: If you find you have too much for one meal, place in container and store in freezer. Fry when needed.
