Artichoke with Meat
No idea what to do with the frozen packed artichokes in your freezer? We have a delicious juicy recipe for you.
2 Pkgs frozen artichoke hearts, thawed
1/2 Lb ground beef
1/3 Cup lemon juice
3 Tbsp pine nuts
1 and 1/2 Cups water
2 Tbsp onion, chopped
5 Tbsp shortening
1/3 Tsp salt
1/3 Tsp black pepper
Place the meat and onion in the frying pan over medium heat and cook, stirring every few minutes, until the juices have evaporated. Add the pine nuts and shortening.
Cook an additional 15 minutes. Add salt and pepper. Remove from heat.
Place artichokes in a baking dish and spread meat over all.
Mix the lemon juice, water, salt and pepper and pour over the mixture in dish.
Cover with foil and bake for 1 hour at 350°, or until most of sauce has evaporated.
Serve this dish with plain white rice.
